Irish Father's Blessing
May the Father of us all bless our oul'
fellas,
wherever they might be, at home in dear old Ireland,
or across the shining sea. In Heaven with the angels
or on earth still with us,
may God be good to the dear old dad,
the one we love so much.

| When we
think of the word hero, we think of the many important people in our lives.
My dad comes to mind as my hero.
Fathers hold a special place in the family.
We learn many valuable lessons from our fathers that teach us
the meaning of character, strength and honor.
Because of their unconditional love and guidance we will always
hold a special place in our hearts to honor them, especially on
Father’s Day!

A Fine Meal for DAD |

Grilled
Rib Eye Steak with Guinness Marinade
Ingredients
for 1 serving:
1 Rib eye steak (12 ounce)
2 garlic cloves
1 teaspoon shallots
1 tablespoon Vidalia onion
1/4 teaspoon Tarragon fresh
1/4 teaspoon parsley
1 teaspoon Worcestershire sauce
1 teaspoon Dijon mustard
4 ounces Guinness room temperature
1 ounce Tamari soy sauce
1/8 teaspoon black pepper coarse grind
1/8 teaspoon salt
Finely chop garlic, shallot and onion and place in a small bowl.
Finely chop parsley and tarragon and add to the bowl.
Add the Worcestershire sauce, Dijon mustard, Guinness, Tamari and
seasonings then mix well to combine. Let stand for 30 minutes to blend
flavors.
Place the rib eye in the marinade and make sure it is well coated.
Cover the bowl and place in the refrigerator for 30 minutes or
overnight if being used for a picnic entree the following day.
Pre heat the grill and then cook the rib eye.
Place the remaining marinade in a small saucepan on the grill and
reduce it for one or two minutes until slightly thickened. Add more
Guinness to the marinade at this stage if desired. Pour over the rib
eye and serve.
This marinade recipe is enough for one steak. Multiply as necessary.

Sharing Memories of
Dad
|
|
My favorite
childhood memory of dad was when it snowed he would tie all our sleds
together (all the neighborhood kids) and pull us up and down the
street. J
I am blessed to have a Dad who is always there for
me. No matter what happens
in my life, I can always count on him.
From fixing a leaky faucet, to playing and watching, his
grandchildren at a baseball game, he always is supporting us.
Every Sunday Dad will come over for donuts and coffee and to
play with his grandchildren. It
is a wonderful feeling to have someone that I can call Dad who touches
so many people with his kindness and character!

living room floor & playing the rolling log. My
sisters and I would have would have to try to “hold on” as he
rolled around the floor. My Mom was already worried we’d get
hurt…..but we LOVED it.! He seemed like a giant to us
